Using up Lockdown Leftovers - Part 1- Mini Flatbread Breakfast Pizza

We hate wasting food but never more so than now, I feel it's important we find creative ways to use everything up so absolutely nothing gets thrown away.

Last night I made a Thai Green Chicken Curry. I roasted a whole chicken rather than buying just breast meat. The left over chicken will be eaten in salads/whatever over the next few days, the bones are going to go into a big stock pan and will be used to make a Chorizo and Vegetable Stew (this will be Using up Lockdown Leftovers - Part 2 - recipe to follow).

To go with the Thai Green Chicken Curry I made some Flatbreads (I found just enough in the remains of a bag of Strong Wholemeal Bread Flour hiding in the cupboard).

We only had one Flatbread each with tea last night, and I didn't want to waste the dough, so I concocted this little recipe for a late breakfast/early brunch.



FLATBREADS;

Ingredients;

250g Strong Bread Flour

1/2 tsp Salt

1/2 tsp Smoked paprika

4tbsp Olive Oil

100ml warm water

Method;

Mix the flour, salt and paprika in a large bowl. Make a well in the centre and add the olive oil and warm water. Use a fork and start to combine it all together, add more water if necessary. Once it starts to come together, use your hands to form a soft ball of dough.

Dust a clean work surface with flour and knead the dough for 5 minutes. Put it back into the bowl, cover and leave for 15 minutes.

Divide the dough into 4 or 5 balls. Roll them out to the thickness of a £2 coin. Heat a griddle pan and cook the flat breads on each side for 2 minutes.

TOPPING (for 2 pizzas);

Ingredients;

2 rashers of bacon (pre-grilled and cut into small pieces)

2 x tbsp tomato chutney (a salsa or tomato puree would also do the job)

1 x large tomato (chopped)

1 x small handful of spinach

1 x mushroom

1 x handful of grated cheese (I used parmesan and a little cheddar)

Salt and pepper


Method;

Heat oven to 240C/fan 220C /gas 8

Spread the tomato chutney (or puree/salsa) over each flatbread

Split the other ingredients over the 2 flatbreads - saving the cheese for last

Place on a baking tray and cook in the oven until the cheese is melted and bubbling

Enjoy.

This can be adapted with whatever you have available to go on top of the pizza!! Make it your own.
